Half or Whole available.. you can pick your lamb if you want and watch it grow or you can just reserve one, also available a few limited amount of hoggot for 2013.

Available for Reservation: Lamb-Half or Whole
Our Lambs are bigger then the average you typically get at farmgate sales because we allow our girls to breed when they are ready and keep our ram with the flock, as we have a old but good barn, most of our lambs are born in Jan/Feb, they are kept with their mothers till naturally weaned(which is pretty much when I take then for butcher) and are pasture raised and finished.. I am willing to do a light grain finish on a reserved lamb only.
They are butchered at a provincally approved small local butcher and while we get a typical cut, we can do longer hanging times on request and we can ask for certain cuts for reserved lambs only.

I tend to keep back and raise two or three ewe lambs to the hogget age (over one year in age but under two years), the flavour, and texture is amazing on a hogget.. this is not! mutton.. I won’t sell a half or a whole one of these but I will share in the bounty, by offering limited amounts of certain cuts for sale. I would be happy to have a visit and provide some of my favorite recipes if you are interested in learning more.
